I made dinner inspired from Cafe Rio. I cannot eat at Cafe Rio, all their food is poison for me. Well, the dinner turned out great. So I jotted down my recipe, and here it is.
2 Chicken breasts (about 1 pound)
3 TBS Chili Powder
2 TBS Lime juice
1 can black beans (not drained)
2 c. cooked rice
1 TBS green taco sauce
1/2 c shredded Monterrey jack cheese
4-8 Tortillas (8 corn or 4 flour tortillas)
1/2 c Vegetable oil
1 tsp salt
1 tsp pepper
1 can diced chilies (or 1 diced Anaheim pepper)
Sour cream to taste
Shredded lettuce
Cilantro
Mix vegetable oil, 2 TBS chili powder, salt and pepper, and 1 TBS lime juice in medium skillet on medium heat add chicken, and cover cook for 15-20 min until down, turning chicken over as necessary. While chicken is cooking, combine rice, black beans and liquid (if not using a can add abt 1/4 c of liquid there were soaking in), chilies, taco sauce, and remaining lime juice and chili powder. Cook on medium heat until mild boil starts, then turn to low. Once chicken is cooked, shred it into bite size pieces. Wipe out skilled with dry paper towel, and turn to med low heat and warm tortillas.
On tortilla spread cheese, then add rice and bean mix, then chicken and top w/ a dollop of sour cream, cilantro and some shredded lettuce.
Enjoy! Takes about 30 minutes to prepare, and serve 2-4 people.
